One of our favorite spots near Red Pine Retreat is Port City Smokehouse in Frankfort. They offer lots of wonderful items including local made foods, a great take out menu and our favorite - in house smoked fish. One of our favorite "up north" snacks is Smoked Trout Spread. We often make up the base for this spread at home and bring it with us, adding the smoked fish after we pick it up at Port City Smokehouse. We buy about a pound of smoked trout and add the fish (after removing skin & bones) to one brick (8 oz.) of cream cheese. We like to add lemon zest, fresh chopped dill and chives, garlic powder and grated onion to the cream cheese first and then gently fold in the fish, leaving some bigger chunks. You can easily adjust this recipe to your liking!
